My Chinese left-over soup + Alton Brown's Thanksgiving stew--
I myself make Chinese left-over soup of veggies, Chinese sausage, turkey/chicken bones--
I make it every 2 weeks to monthly with carrots, celery, cabbage or cauliflower side trimmings and chick pea "juice" from cans as stock.
Very nice, you can use a store bought roast chicken carcass.
